Food safety and food hygiene
Ensuring high standards of food safety is now an absolute priority for all businesses operating in the agri-food supply chain, from primary production to catering. In an increasingly strict and complex regulatory context, compliance with European provisions on food hygiene is not only a legal obligation, but also a strategic lever to protect consumers, avoid penalties and strengthen trust in your brand.
S.T.A. offers a complete food safety consulting service, tailored to the needs of companies, sector operators and processing and distribution facilities. Our work supports businesses in the correct application of current regulations and in implementing self-control systems based on HACCP principles, in full compliance with the so-called EU “Hygiene Package”.
The regulatory framework
The “Hygiene Package” is a set of European regulations fundamental to food safety management within Member States. Among these, Regulation (EC) 852/2004 governs general food hygiene, Regulation (EC) 853/2004 introduces specific rules for food of animal origin, while Regulation (EC) 178/2002 sets out the general principles of food law, including traceability.
These rules require that every stage of production, processing and distribution be carried out in compliance with precise hygiene and sanitary requirements, through the application of structured procedures and timely checks. In this scenario, the HACCP system (Hazard Analysis and Critical Control Points) is the operational reference for the assessment of risks related to the product and the management of critical control points.
S.T.A. food safety consulting
S.T.A. supports companies in managing all the requirements relating to food safety. Our consultants develop practical and documentary solutions to effectively meet the regulatory, technical and operational needs related to the production, packaging and distribution of food.
Through targeted inspections of the premises, we analyse the organisation of workflows, the methods of storing and handling products, and the characteristics of environments and equipment. We then prepare the HACCP Self-Control Plan, customised to the specific production reality, and accompany the client through all stages of implementation and verification.
An integrated approach to hygiene and safety management
S.T.A.’s approach to food safety is integrated and multidisciplinary. We do not limit ourselves to drafting the documentation plan, but also take care of staff training, adapting facilities and verifying that systems and production environments comply with the hygiene and sanitary regulations in force.
We also support companies in the assessment of product risks, identifying the most effective preventive and corrective measures. We stand by our clients also in managing traceability procedures, organising any recalls and providing assistance during inspections or checks by the competent bodies.
Every intervention of ours is oriented not only towards legal compliance, but also towards improving hygiene performance and enhancing company quality.
